"Extreme Lemon Chicken"

"EXTREME LEMON CHICKEN" RECIPE FROM
GWEN CAMPBELL

Extremely Lemon Chicken

Lightly brown in a large pot:

  • 1 ½ pounds of boneless skinless chicken breasts cut into 1 inch cubes

(This recipe works with anywhere from 1 to 3 pounds of chicken or other poultry, the amount does not have to be precise)

Add:

  • 1 can (12 oz) frozen lemonade concentrate (thawed or still frozen)

Add to taste:

  • 1 teaspoon salt
  • 1 tablespoon garlic

Bring the mixture to a boil, uncovered; stirring occasionally.

Let the mixture boil, to reduce the liquid.

When the liquid is nearly gone stir more frequently and watch carefully so that the chicken doesn’t burn.

Continue cooking until the concentrate is reduced to a glaze on the chicken.

Garnish with slivers of lemon peel and thin slices of fresh lemon.

Tastes equally good hot or cold.


Each month, PITA will select a winner from shooters who have submitted recipes for this contest.  The winner will have his/her photo taken and included with the winning recipe.  Each winner will be awarded a "really kewl" chef's apron.  When you see someone wearing one of these aprons around the camping grounds - show them reverence for their culinary talents - they are an official "12 GAUGE GOURMET"!
