Extremely Lemon Chicken
Lightly
brown in a large pot:
-
1 ½
pounds of boneless skinless chicken breasts cut into 1
inch cubes
(This
recipe works with anywhere from 1 to 3 pounds of chicken or
other poultry, the amount does not have to be precise)
Add:
-
1 can
(12 oz) frozen lemonade concentrate (thawed or still
frozen)
Add to
taste:
-
1
teaspoon salt
-
1
tablespoon garlic
Bring the
mixture to a boil, uncovered; stirring occasionally.
Let the
mixture boil, to reduce the liquid.
When the
liquid is nearly gone stir more frequently and watch
carefully so that the chicken doesn’t burn.
Continue
cooking until the concentrate is reduced to a glaze on the
chicken.
Garnish
with slivers of lemon peel and thin slices of fresh lemon.
Tastes
equally good hot or cold. |
