Corn Pasta Salad

1 Tbsp. butter
1 Tbsp. oil
½ c. diced red onion
1 ½ c. frozen corn kernels
4 ½ c. uncooked pasta
1 c. mayo
1 bunch of cilantro, chopped
1 Tbsp. chipotle puree (use 2 if you like it really spicy)
salt

Combine the corn, butter & oil. Roast in a 400º oven until onions are soft and translucent. Remove from the oven and cool.

Cook the pasta.

Mix the pasta and the corn with the remaining ingredients. Chill and serve.
 

 
Each month, PITA will select a winner from shooters who have submitted recipes for this contest. The winner will have his/her photo taken and included with the winning recipe. Each winner will be awarded a distinctive PITA chef's apron. When you see someone wearing one of these aprons around the camping grounds - show them reverence for their culinary talents - they are an official "12 GAUGE GOURMET"!
