"Corn Pasta Salad"

Corn Pasta
Salad
1 Tbsp. butter
1 Tbsp. oil
½ c. diced red onion
1 ½ c. frozen corn kernels
4 ½ c. uncooked pasta
1 c. mayo
1 bunch of cilantro, chopped
1 Tbsp. chipotle puree (use 2 if you like it really spicy)
salt
Combine the corn, butter & oil. Roast in a 400º oven until onions are
soft and translucent. Remove from the oven and cool.
Cook the pasta.
Mix the pasta and the corn with the remaining ingredients. Chill and
serve.
