"Filet Steaks"

A GREAT MEAL FOR FOUR WHILE
"ON THE ROAD"

 

4 beef filets (Costco's are great!) I don't marinate these - I season with some sage, dash of rosemary, seasoning salt, ground pepper, dash of garlic salt, and some parmesan cheese. Let sit for an hour in room say 70-74 deg. - or marinate & season how ever you like!

 

VEGGIE PACKS

 

6 medium size red potatoes, 1 good size onion, 1 -2 green peppers 1 yellow squash.  You can substitute any kind of veggies you want here,  just match your veggies that cook about the same time.  I slice these about a quarter inch thick then cut in half.  Season with salt, pepper, sage, garlic seasoning salt.  Again you can use what ever seasonings you like here.  Mix all  up and split into 3rd's and put into sealed aluminum pouches sized accordingly.  The recipe I list takes about 20 -30 minutes on a grill of medium heat - turning several times to not burn.

 

If using a small propane BBQ, wrap 1/2 of the BURNER in double wrapped aluminum foil.  Turn on high, put veggies packs on the open flame, let it come up to high  temp.  Move veggies' out of the way and sear your steaks 20-30 seconds a side over the open flame.

 

Turn flame to medium place fillets over the foil wrapped side of the grill. Veggies back over the flame. (if using charcoal use the indirect method) I would check the steaks every 5-8 minutes, flip the potatoes every 8-10 minutes. Everything should be done in 20-25 minutes for medium steaks. (put steaks over high open flame last 5 minutes for color) - if you want rarer meat leave the potatoes on for 10 minutes before you start your steaks.

 

Dessert

 

4 Ripe peaches

honey

vanilla ice cream

 

Halve the peaches and core them

 

Make a open top pouch out of alum. foil large enough to put 4 halves in the bottom un-stacked. X2

 

Drizzled honey over the the halves (quarter cup or so)

 

Do not seal the pouch, leave the top open so you get a little steam effect, but don't trap all the heat.

 

Put on the open flame on medium while eating your dinner let cook 10-15 minutes until warmed and soft. remove, serve 2 halves in 4 bowls drizzle a little more honey and a scoop of ice cream, got powdered sugar? BAM BAM YA BABY!!!!!!!!

 

Maybe serve with a great liquor like Grande Mariner?

 

You should be able to serve this gourmet meal with all prep in under an hour!
