"Taco Soup"

Taco Soup by
Marian Pinnell – Central Point, OR
1½-2 lbs. browned ground beef
1 can kidney beans
1 can pinto beans (may use ranch style)
1 can shoepeg corn
1 can Rotel tomotoes (use crushed style to make less spicy –
can also use Italian style tomotoes)
1 pkg Dry Taco mix
1 pkg Dry Ranch style dressing
1-2 cans water
Combine the taco mix and ranch style dressing mix with the
water. Stir in the rest of the ingredients. This may be
simmered in a crock pot all day or if you are in a hurry
cook on top of the stove for about an hour. Serve with taco
chips and sour cream. Use less water to make soup thicker.
Each month,
PITA will select a winner from shooters who have submitted
recipes for this contest. The winner will have his/her
photo taken and included with the winning recipe. Each
winner will be awarded a "really kewl" chef's apron. When you see someone wearing
one of these aprons around the camping grounds - show them
reverence for their culinary talents - they are an official "12
GAUGE GOURMET"!
